Abstract
Historically it was assumed that a potable water rinse (PWR) of surfaces after treatment with disinfectants would remove all residues of the disinfectant active ingredients (AIs) from those surfaces. Study results are presented here that indicate that disinfectant residues may remain on a surface after PWR, and there is concern that any remaining residues could potentially be transferred to food placed on that surface. Currently there is no standardized procedure for PWR, and study results indicate that varying, for example, the quantity of water used in PWR and other variables, may potentially have significant effects on the residue quantity remaining after PWR. A standardized protocol for the application of disinfectants, PWR, and quantification of remaining residues is essential for consistent measurements, to provide accurate data to guide risk assessments for food contact surfaces, and as a guideline for study data submitted in support of new disinfectant product registrations. Standardized protocols have been developed based on the study results and are presented for two common AI classes of disinfectants: Phenolic compounds, and Quaternary Ammonium Compounds (QACs).
