The Beef Checkoff is a producer- and importer-funded marketing and research program, which includes a significant commitment to supporting nutrition research to better understand beef's role in healthy diets. Indices and scores for profiling and classifying the quality of foods, nutrients, and dietary patterns abound in nutrition research -- offering a multitude of overlapping and often conflicting criteria that can result in contradictory assessments of the healthfulness of foods and dietary patterns. Misclassification of foods within various scoring systems is problematic, increasing risk of bias and distorting diet-disease associations. The Beef Checkoff has consistently elevated evidence via the Dietary Guidelines Advisory Committee (DGAC) process regarding the need to avoid the misclassification of meat in dietary pattern research. Misclassification of meat in dietary research skews meat intake estimates, confuses interpretation of results, exacerbates bias, and overinflates reported associations between meat intake and disease risk, ultimately causing consumer confusion and skepticism of dietary guidance. It is with this background that we appreciate the opportunity to provide data and information to support a joint federal agency effort to define ultra-processed foods (UPFs) -- a term that, to date, has been inconsistently defined and applied providing yet another opportunity for the misclassification of meat.
